Philadelphians will forever disagree over who makes the best cheesesteak. But there is one thing no can dispute – Pat Olivieri invented the steak sandwich in 1930, and the cheesesteak soon after. Pat’s is the Original, the King, and the gold standard by which every other cheesesteak is measured. It is the sacred temple and holy shrine of the Philadelphia cheesesteak. There’s Pat’s and there’s everyone else. End of story.

 

Pat’s or Geno’s? That debate will rage on into eternity. But as far as Pat’s loyalists are concerned, the answer is clear – Geno’s is just the sidekick, the kid brother, the place you go when the line at Pat’s is too long.  Pat’s is Batman, Geno’s is Robin. Pat’s is Krusty the Clown, Geno’s is Sideshow Bob. Pat’s is numero uno, Geno’s is Sonny Bono, Baba Louie, and Garfunkel.

 

Go any time of day or night, and there is almost always a line. But it moves fast. Pat’s has the system down. You order a steak, blink your eyes, and there it is, waiting for you at the next window like a long-lost friend.

For many, a traditional "Whiz wit'" is the only way to go at Pat's. (Just be certain to stand upwind from your steak so the dripping Whiz doesn't land on your pants or shoes.) But Pat's now offers a couple of new options as well - seeded rolls and Cooper Sharp cheese.
